- 1 ¼ cup self-raising flour
- 1 tsp bicarb soda
- 4 tbsp sugar
- 1 pinch salt
- 2 small bananas about 120g
- 1 egg
- ¾ cup milk
- 2 tbsp melted butter
- 1 tsp vinegar
- butter or oil for frying
Heat a frypan over medium heat.
Whisk the 1 ¼ cup self-raising flour, 1 tsp bicarb soda, 4 tbsp sugar and 1 pinch salt in a mixing bowl, then make a well in the center.
Mash the 2 small bananas in a bowl, then add the 1 egg and ¾ cup milk.
Pour the wet ingredients into the dry ingredients and whisk until combined.The batter may still have small lumps, they'll cook out. Add the 2 tbsp melted butter and 1 tsp vinegar, whisking briefly to combine.
Once the pan is up to temperature, add a little butter or oil to the frypan and scoop ⅓ cup of batter into the fry pan.You can use the base of the measuring cup to spread the mix out if needed. Cook the pancake until bubbles have popped and the top looks slightly darker or dryer, about 2 ½ minutes.
Flip the pancake over a cook until golden, about 1 minute.
Keep pancakes warm in the oven while cooking the rest. Serve with butter, maple syrup and fresh fruit.
