Banana Pancakes

Ingredients
- 1 ¼ cup self-raising flour
- 1 tsp bicarb soda
- 4 tbsp sugar
- 1 pinch salt
- 2 small bananas about 120g
- 1 egg
- ¾ cup milk
- 2 tbsp melted butter
- 1 tsp vinegar
- butter or oil for frying
Instructions
- Heat a frypan over medium heat.
- Whisk the 1 ¼ cup self-raising flour, 1 tsp bicarb soda, 4 tbsp sugar and 1 pinch salt in a mixing bowl, then make a well in the center.
- Mash the 2 small bananas in a bowl, then add the 1 egg and ¾ cup milk.
- Pour the wet ingredients into the dry ingredients and whisk until combined.The batter may still have small lumps, they'll cook out.
- Add the 2 tbsp melted butter and 1 tsp vinegar, whisking briefly to combine.
- Once the pan is up to temperature, add a little butter or oil to the frypan and scoop ⅓ cup of batter into the fry pan.You can use the base of the measuring cup to spread the mix out if needed.
- Cook the pancake until bubbles have popped and the top looks slightly darker or dryer, about 2 ½ minutes.
- Flip the pancake over a cook until golden, about 1 minute.
- Keep pancakes warm in the oven while cooking the rest. Serve with butter, maple syrup and fresh fruit.
